Arrosto di carne in casseruola - Casserole of Veal
Ingredients for 4 persons
1 kg of loin of veal
3 tablespoonfulls of Vasari erxtravirgin olive oil
2 cloves of garlic
1 spring of rosemary
1 glass of red wine Mamertino Rosso 2001
beef stock or stock cube,salt and pepper
Tie up the meat with string and put it in the casserole.Place on the hob and brown on all sides over a high heat.Sprinkle with salt and pepper,crushed garlic,rosemary and cover and flavour with the Mamertino Rosso.When the wine has evaporated,add the stock and cover the casserole until cooked.Remove the garlic and rosemary,slice the meat and serve with the sauce
Ragù di carne alla Siciliana - Meat Stew Sicilian Style
Ingredients for 6 persons
200g minced meat
1 onion
200g of passato-tomato sauce
2 tablespoons of Extra Virgin Olive Oil Vasari
1 glass of Mamertino Rosso wine
salt and pepper
Finely slice the onion and fry in a pan,add the meat and brown for a few minutes.Cover with the wine and,when this has evaporated,add the tomato sauce.Season with salt and pepper and cook slowly for about an hour.
Add the ragù to macaroni or spaghetti boiled ' al dente '
Pescespada alla Messinese Swordfish with Capers, fresh Tomato & Oregano
Buy a nice piece of swordfish -about 400g for 2 persons-and slice into 2cm strips.Fry on both sides in Vasari Extra Virgin Olive Oil.Season with salt and pepper and add sone finely sliced celery,four cherry tomatoes and a handful of capers,green olives and oregano.Cover and cook for one minute on each side.Add a glass of Mamertino Bianco wine some caciocavallo cheese sliced in thin strips.Cover again and cook for 10 minutes.
Triglie in padella - Pan Fried Red Mullet
Ingredients for 2 persons
Wash and de-scale 4 red mullet-about 200 g each.Heat some Vasari Extra Virgin Olive Oil in a pan and add 4 cloves of garlic and 4 ripe tomatoes.Add the fish and cook for 3 minutes,adding salt,pepper,and a glass of Mamertino Bianco. Cover and cook for a further 10 minutes.Serve mullet on a plate sprinkled with fine chopped parsley
